Air fryer muffin recipe produces ‘beautifully golden’ results with just 10 minutes of prep

These homemade muffins are quick to prepare and bake in the air fryer in just 15 minutes, making them perfect for a speedy breakfast or teatime treat

Fancy a muffin without the hassle of firing up the oven?

This air fryer muffin recipe is just what you need for a quick sweet fix come breakfast or tea time. With just 10 minutes prep and a few staple ingredients, plus your chosen fixings, you’ll have perfect pop-in-your-mouth treats for six to eight people, reports the Express.

BBC Good Food has shared this brilliant air fryer hack that’ll have your kitchen smelling divine in moments. The site reads: “Make beautifully golden brown muffins in your air fryer in no time. Add blueberries, chocolate chips or dried fruit, whatever you like. You can even double the mixture to make more.”

How to make muffins in the air fryer

Ingredients

60ml vegetable oil

75g natural yogurt

One egg

Two tbsp milk

100g golden caster sugar

150g self-raising flour

A quarter tsp bicarbonate of soda

75g blueberries, chocolate chips or dried fruit

Method

Give the air fryer a two-minute preheat at 160C. Grab a large mixing bowl, chuck in the oil, yoghurt, egg, and milk, and whisk until incorporated.

Slowly add in the sugar, flour, and bicarbonate of soda, giving it a good mix until you have a super smooth batter. Now for the fun part – toss in your choice of blueberries, chocolate chips, or some fruity bits. Fold these in gently.

Spoon the mix into silicone muffin cases or a paper-lined muffin tray, filling them to three-quarters full to give those muffins room to puff up.

You ought to get about six to eight muffins ready to go, though if your air fryer basket is on the snug side, you might have to bake them in batches.

Bake in the air fryer for approximately 12 to 15 minutes, or until the muffins develop a golden-brown exterior and a skewer inserted into the centre emerges clean.
