Swap avocado for a ‘phenomenal’ veg on toast that’s smoother and ‘shockingly delicious’

Avocado toast can be pricey and tired, but there’s a cheaper alternative that’s just as smooth and savoury.

Avocado toast has reigned supreme over breakfast menus for years, but let’s face it, the recipe can start to feel a bit stale after a while. Plus, avocados aren’t exactly the cheapest item in the produce aisle, so regularly stocking up on them can put a dent in your wallet.

But fear not, fans of savoury breakfasts; there’s another veggie out there that’s equally creamy, savoury, subtly fruity and downright delicious. Those who’ve made the switch have hailed its taste as “shockingly delicious”.

If you’re game for shaking up your morning routine, lima beans on toast could well become your new favourite. We’ve laid out how to whip up this fresh take on toast below.

How to make lima beans on toast

According to the culinary whizzes at Sauce Stache, “This dish turns out phenomenal, and it’s low in net carbs, high in fibre, and protein. It also plays a pretty important role in your metabolic health.”

What are the ingredients for lima beans on toast?

For the lima bean spread:

  • One 400g can of lima beans
  • One green onion
  • A handful of fresh spinach
  • A pinch of olive oil
  • One-half of a lemon juiced

For the toast:

  • One to two slices of toast
  • Whole grain mustard
  • One tomato
  • Red onion
  • Extra green onion

Method

  1. To kick things off, drain the can of lima beans thoroughly, then pop them into a food processor along with the green onion, fresh spinach, a dash of olive oil and the juice of half a lemon.
  2. Blitz the mixture until it’s utterly smooth and velvety, scraping down the sides whenever necessary. The lima beans will miraculously turn into a surprisingly silky spread with a delicate, fruity taste reminiscent of avocado.
  3. Toast your bread however you fancy it, then slather a layer of whole-grain mustard across each slice. Dollop the silky lima bean mixture generously on top, smoothing it out evenly.
  4. Top it off with sliced tomato, red onion and a scattering of finely sliced green onion before tucking in.
