A leading longevity researcher has revealed what he believes is the world‘s healthiest breakfast – and it doesn’t come from a fancy health food shop or a trendy London café.

Instead, it’s lovingly prepared each morning by a group of locals in a quiet corner of Costa Rica.

After two decades spent studying the lives and habits of people who live past 100, the expert says he found one of the most powerful secrets to a long, healthy life bubbling away in a humble kitchen in Nicoya.

Each day, long before sunrise, members of the Cooperativa Nicoya rise at 4am to prepare their signature meal: handmade corn tortillas served with black beans, rice, and a spoonful of fiery home-pickled vegetables. Everything is cooked over a wood fire – no shortcuts, no preservatives.

“This is more than just a breakfast – it’s a daily ritual rooted in community, tradition and nutrition,” researcher Dan Buettner writes for CNBC. “They’ve unknowingly created the ideal start to the day, using ingredients their families have relied on for generations.”

The dish itself is a nutritional powerhouse. The hand-pressed corn tortillas are made using a traditional process involving wood ash, which breaks down the corn’s structure and unlocks essential nutrients like niacin and amino acids.

The black beans, slow-cooked with red peppers and herbs, are packed with antioxidants, B vitamins, and fibre – similar to those found in blueberries.

Even better, when beans are combined with rice, they form what’s known as a complete protein – providing all the essential amino acids the body needs.

The breakfast also includes a cup of local coffee made from “pea berry” beans – rich in antioxidants and caffeine – and a spicy chilero made with vinegar, carrots, and blazing-hot peppers, offering a daily dose of gut-friendly probiotics and anti-inflammatory compounds.

“It’s a meal that’s simple, affordable and almost perfectly balanced,” he adds. “You’ve got fibre, healthy carbs, complete proteins, antioxidants, and probiotics all on one plate – it’s no wonder these people thrive well into their 90s and beyond.”

Despite its impressive health benefits, the meal costs just $4.23 (£3.36) to make – a far cry from some of the pricey superfoods hailed in the West.

And with more people looking to live longer, healthier lives, the expert believes it’s time we take a few tips from Nicoya.

“This breakfast isn’t about fads or trends,” he says. “It’s about timeless wisdom — the kind that’s helped people live long, happy lives without ever needing a diet book.”

So, if you’re looking to start your day the centenarian way, it might be time to swap your cereal for a warm tortilla and a bowl of spicy beans.
