What are the ingredients for lima beans on toast?
For the lima bean spread:
- One 400g can of lima beans
- One green onion
- A handful of fresh spinach
- A pinch of olive oil
- One-half of a lemon juiced
For the toast:
- One to two slices of toast
- Whole grain mustard
- One tomato
- Red onion
- Extra green onion
Method
- To kick things off, drain the can of lima beans thoroughly, then pop them into a food processor along with the green onion, fresh spinach, a dash of olive oil and the juice of half a lemon.
- Blitz the mixture until it’s utterly smooth and velvety, scraping down the sides whenever necessary. The lima beans will miraculously turn into a surprisingly silky spread with a delicate, fruity taste reminiscent of avocado.
- Toast your bread however you fancy it, then slather a layer of whole-grain mustard across each slice. Dollop the silky lima bean mixture generously on top, smoothing it out evenly.
